Ingredients
1. 1 kilo fresh of half tipe Alfonso mangoes.
2. ¾ kilo sugar.
3. 12 flakes garlic.
4. 3 tblsps. salt.

5. 1 tsp. chilli powder.
6. 2 tblsp. Each of cumin seeds, coriander and cardamom seeds.
7. 6 cloves. 2 – inch piece cinnamon stick.
8. 2 tblsps. each of blanched and sliced almonds and pistachios.
9. 6 dry dates.
10. 1 cup vinegar.

Method

1. Peel and slice the mangoes into quarters. Pit and soak the dates in warm water for half an hour, chop them.

2. Place ¼ litre water in a pan along with sugar. When the sugar dissolves, add mango and garlic and salt.

3.When the mangoes turn soft and transparent and the chutney becomes almost dry, mix in the spices and nuts. Cool and then put in vinegar. Put the chutney in a clean glass jar.
