3 tbsp light soyabean sauce.
½ cup pineapple juice.
1tbsp vinegar.

¼ tsp powdered ginger.
¾ cup diced capsicum.
1 tbsp cornflour mixed with 2 tbsp water.
1 cup diced pineapple.
3 cups cooked rice.
To garnish: peanuts and tomato slices.

METHOD:Mix chicken nuggets, soya bean sauce, pineapple juice,
Vinegar, salt, pepper and ginger in a saucepan.
Cook over low heat for 15-20 minutes or until the chicken is tender. Once the chicken is done, add the capsicum and cook for 7 Minutes. Add the cornflour mixture and stir constantly till thick. Stir in the pineapple and cooked rice. Mix well. Serve hot.
