Ingredients

1. 2 ½ kilos raw mangoes.
2.1 kilo jaggery.
3.1 bottle vinegar.
4. 25 cloves.

5.10 bay leaves.
6. 4-inch piece cinnamon stick, broken into bits.
7. 4 tblsps each of salt, chilli powder and powdered cumin seeds.

Method

1.Cut the mangoes into quarters. Spread on a wide plate and sprinkle on them all the spices. Grind the jaggery to a paste and dissolve in vinegar.

2. Place the pieces of mangoes into a jar and put jaggery mixture over the top. Plce in the sun for 15 days shaking the jar twice a day religiously.
