METHOD:.
Drain the beans and pressure cook in 300 ml water for 20 Minutes.
Drain and reserve stock. Put the beans in a casserole With the onion, celery, capsicum and tomatoes.
Mix the stock with The remaining ingredients. Pour over the beans.
Cover and bake in preheated 180°C/360°F oven for 45 minutes to 1 hour. Garnish with fresh coriander.
